Egg Nog Scones

I'm working from home today and I knew that I wanted to take a mid-morning break to whip up something fun and festive. These Egg Nog scones were the perfect holiday treat with a nice cup of tea. I'm a huge fan of Mama Pea from Peas and Thank You and these Egg Nog Scones are adapted from  her own amazing vegan recipe. These would be a great addition to a Christmas morning brunch.


What you'll need:

Scones:2-1/2 cups Flour
1/2 cup Sugar
1 tbsp Baking Powder
1/2 tbsp Baking Soda
1/4 tsp Cream of Tartar
1/2 tsp Salt
3/4 tsp Nutmeg
1/2 cup Butter or Margarine
3/4 cup Egg Nog
1 egg
1 tsp Vanilla
 
Glaze:
1 1/2 cup Powdered Sugar
2-3 tbsp Egg Nog
Pinch Nutmeg
Pinch Cinnamon

Preheat oven to 350°F.

In a large mixing bowl, combine flour, sugar, baking powder, baking soda, cream of tartar, salt and nutmeg.

 Cut in butter/margarine until the mixture is coarse in texture.

Combine egg nog, egg and vanilla in a small bowl. Add into dry ingredients.

Stir until a dough forms, which may be a bit crumbly. Do not overmix.

Turn dough out onto a lightly floured board and form into a round circle, about 1 1/2 inches high and 10 inches in diameter. Slice circle into eight equal wedges, and transfer scones to a baking sheet. Bake for 20-22 minutes.

Meanwhile prepare glaze by combing all ingredients in a small bowl and mixing until it comes to a drizzly consistency. Add more egg nog if needed.

Let scones cool and then serve drizzled with icing.

Makes 8 large scones
